Instructions

  • Remove the pork tenderloin from its packaging and pat down, then season with salt, garlic powder, and pepper on all sides.
1 lb Pork tenderloin, 1 teaspoon Salt, ½ teaspoon Garlic powder, ¼ teaspoon Black pepper
  • Add the avocado oil to the Instant Pot, and set it to saute mode.
    1 Tablespoon Avocado oil
  • Once the oil is hot, add the tenderloin. Sear on both sides until golden brown, about 1-2 minutes on each side. Remove from the Instant Pot and set aside. The bottom of the Instant Pot should have stuck on browned bits.
  • Add the minced garlic and saute until fragrant, then add the both and scrape up the browned bits in the pan.
2 cloves Garlic, 1 cup Broth or Stock
  • In a small bowl, add the corn starch and water, then stir to combine into a slurry. Add the slurry to the broth, whisking continuously to combine.
¼ cup Water, 2 Tablespoons Cornstarch
  • Saute for 1-2 minutes until thickened, then transfer gravy to a bowl.
  • Turn off saute mode and rinse out the inner liner of the pot, then add a cup of water to the pot.
    1 cup Water
  • Add a trivet, then place the pork on the trivet.
  • Set to high pressure, and cook the pork for 5 minutes. Quick release the pressure when the timer goes off, and check to make sure the meat is at least 145°F using a meat thermometer.
  • Remove from the Instant Pot and rest for 5 minutes. Slice, and serve with gravy!

Notes

  • Make sure to make the gravy before fully cooking the tenderloin! While it can be made afterwards, you'll miss out on the browned bits in the pan, making for a far less flavorful gravy.
  • Make absolute sure to check the temperature of the pork with a meat thermometer. A low cook time and variable thickness of meat makes this especially important!
  • The seasonings for this recipe are variable! Garlic, salt, and pepper are great starting points, but feel free to add herbs, brown sugar, and other favorite spices. You can't go wrong!
  • Always let pork rest after cooking! The rest time will allow this tenderloin to finish cooking and soak up any lost juice. Trust me, it makes a difference!
