Easy Leftover Ham Recipes (Ham and Bean Soup)

Equipment

  • 6 qt. Instant Pot

Ingredients

  • 8 cups Vegetable broth
  • 1 bag 15-Bean Soup Mix 20 ounce
  • 1 lb. Cubed ham
  • 1 Yellow onion
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 6 cloves Garlic minced
  • 2 Tablespoons Butter

Instructions

  • Wash and chop all of the vegetables into bite-sized pieces, and mince the garlic.
    1 Yellow onion, 1 cup Carrots, 1 cup Celery, 6 cloves Garlic
  • Add the butter into your Instant Pot and set it to saute, then melt the butter.
    2 Tablespoons Butter
  • Once the butter is melted, add the chopped onion to the pot and saute until translucent and soft, about 5 minutes.
  • Add in the minced garlic and saute until fragrant, about another minute. Then add in every other ingredient except for the ham, including the flavor packet from the soup mix!
    1 bag 15-Bean Soup Mix 20 ounce, 8 cups Vegetable broth
  • Set your instant pot to manual/high pressure, then secure the lid. Set it to cook for 40 minutes and be aware it will take 10 minutes to pressurize on top of that cook time.
  • Once the timer has gone off, manually release the pressure and stir in the cubed ham. Let it sit for a few minutes so the ham gets warm and infused with flavor, then sprinkle with extra salt and pepper to taste, and serve!

Notes

  • Store ham in the freezer in a freezer-safe airtight container for up to 1-2 months and simply take what you need out when you're ready to cook! Ham slices are incredibly easy to thaw, so this is a great way to extend the life of your leftover ham.
  • Don't get rid of that bone! Ham bone recipes are a total game-changer. You can use a ham bone to make a homemade bone broth for soups that will change the way you make soup!
  • There are other easy ways to use leftover ham, too. Try mixing it into fried rice, stir-fry, an omelette, quiche, macaroni and cheese, or diced in a chef's salad. You will never run out of leftover ham ideas if you get creative with what to pair it with!
