Ingredients

  • 1 Pork tenderloin
  • ¼ cup Brown sugar
  • 1 Tablespoon Avocado oil or other favorite oil
  • ½ teaspoon Salt
  • ½ teaspoon Garlic powder
  • ½ teaspoon Black pepper

Instructions

  • Set the pork tenderloin on a cutting board and use a sharp knife to cut it into 1 inch thick slices.

  • In a medium mixing bowl, add all other ingredients except the pork, then mix them well with a whisk. Add in the pork medallions, and turn them over to coat them all on each side.
    ¼ cup Brown sugar, 1 Tablespoon Avocado oil, ½ teaspoon Salt, ½ teaspoon Garlic powder, ½ teaspoon Black pepper
  • Transfer the coated medallions to the air fryer basket.
  • Cook at 390°F for 7 minutes, flipping halfway through the cook time, or until the internal temperature reads 145°F with a meat thermometer.
  • Remove from the basket and let rest for 5 minutes, then serve!

Notes

  • I love avocado oil- it's a thick oil with a much higher smoke point than olive oil, and it's hard to beat when you want a neutral flavor! That said, don't feel restricted to only avocado oil. This recipe doesn't cook to a high enough temperature to reach smoke point, so use what you have!
  • The seasonings for this recipe are perfect to pair with just about anything you're cooking up, but feel free to experiment! I love adding in some herbs or a little Parmesan cheese.
  • Because this recipe takes such a short time to cook, try cutting the pork first and setting it in the seasoning mixture in the fridge for an easy marinade while you whip up the sides!
