My recipe for pork rib roast is ready in under an hour and requires minimal prep, making it perfect for feeding a crowd!
One hour before cooking, pull your pork roast from the refrigerator. In a small bowl, combine ingredients for pork roast seasoning.
Preheat the oven to 500°F. Using a paper towel, pat the roast dry and rub it evenly with seasoning on all sides.
Spray a roasting pan with nonstick spray and carefully add the pork roast. Then, add sweet potatoes to the bottom of the pan.
Roast pork for 10 minutes at 500°F. Remove roast from the oven and reduce oven temperature to 325°F.
In a bowl, combine melted butter and maple syrup. Carefully brush the maple syrup mixture all over the pork roast.
Place the pork back in the oven at 325°F for 30 minutes, or until the thickest part of the pork reaches an internal temperature of 155°F.
Transfer the pork to a carving board and let rest for about 10 minutes.
After resting, cut between the ribs, transfer to plates, serve, and enjoy!
