Full of fresh and zingy flavor, this recipe is the perfect way to use up leftover pulled pork - and a great reason to make more!
– Taco shells – Pulled pork – Tomato – Corn – Red onion – Green onion – Jalapeno – Avocado – Lime – Shredded cheese – Cilantro – Sour cream
Prepare the pulled pork following my recipe, or use your favorite pulled pork or store-bought.
Set up the taco shells upright for easy filling. Using a taco plate makes this easy!
Fill each taco with ⅓ cup slow cooker pulled pork per taco.
Top with fresh corn, tomato, and onions.
Add jalapeno slices, then cilantro, and drizzle with BBQ or your favorite sauce.
Top with a sprinkle of shredded cheese and a dollop of sour cream (I used an icing bag for mine!).
Finish the taco off with diced avocado and a squeeze of lemon juice, and serve!
