What makes this recipe special?
Made with leftover rice and ham and thrown all together, this is my go-to fried rice recipe for a busy weeknight.
In a skillet over medium heat add olive oil and allow it to warm up. Once heated, add in minced garlic and cook for 2-3 minutes or until fragrant.
Add in corn and peas and sauté for an additional 2-3 minutes.
Next, add in chopped ham and allow to heat up, 2-3 minutes.
Toss in cooked (cold) rice and cook for 5 minutes or until heated through.
Top with sliced green onions, ham bone broth, and soy sauce. Mix them together completely.
Carefully move your rice from the center of the skillet. Crack 4 eggs into the center of the skillet and whisk together to scramble.
Once the eggs are scrambled, mix your rice and eggs all together. Serve immediately and enjoy!
