It's perfectly cooked, unbelievably tender, and all set to serve in only 30 minutes. Plus, it comes with its own delicious gravy!
Remove the pork tenderloin from its packaging and pat down, then season with salt, garlic powder, and pepper on all sides.
Add the avocado oil to the Instant Pot, and set it to saute mode.
Once the oil is hot, add the tenderloin. Sear on both sides until golden brown, about 1-2 minutes on each side. Remove from the Instant Pot and set aside.
Add the minced garlic and saute until fragrant, then add the both and scrape up the browned bits in the pan.
In a bowl, add the cornstarch and water, then stir to combine into a slurry. Add the slurry to the broth, whisking continuously to combine.
Saute for 1-2 minutes until thickened, then transfer gravy to a bowl.
Turn off saute mode and rinse out the inner liner of the pot, then add a cup of water to the pot.
Add a trivet, then place the pork on the trivet.
Set to high pressure, and cook the pork for 5 minutes. Quick release the pressure when the timer goes off,
Remove from the Instant Pot and rest for 5 minutes. Slice, and serve with gravy!
