This packs in all the rich, savory flavors of this classic soup into one easy dish that takes just an hour - no soaking beans required!
Wash and chop all of the vegetables into bite-sized pieces, and mince the garlic.
Add the butter into your Instant Pot and set it to saute, then melt the butter.
Once the butter is melted, add the chopped onion to the pot and saute until translucent and soft, about 5 minutes.
Add in the minced garlic and saute until fragrant, about another minute. Then add in every other ingredient except for the ham, including the flavor packet from the soup mix!
Set your instant pot to manual/high pressure, then secure the lid. Set it to cook for 40 minutes and be aware it will take 10 minutes to pressurize on top of that cook time.
Manually release the pressure and stir in the cubed ham. Let it sit for a few minutes so the ham gets warm and infused with flavor, then sprinkle with extra salt and pepper to taste, and serve!
