What makes this recipe special?
These fluffy, tender potatoes wrapped in bacon are ready with just ten minutes of prep and are perfect for loading up to your heart's content.
Preheat the oven to 350°F. While it's heating, scrub, rinse, and dry the potatoes. Wrap each potato with 1-2 slices of bacon, overlapping the slices to account for shrinkage.
Secure the bacon in place with as many toothpicks as it takes, then place the wrapped potatoes on a wire rack on top of a baking sheet.
Bake the wrapped potatoes for 55-60 minutes, until the potatoes can be easily pierced with a fork and the bacon is crispy. Remove, let cool for 10 minutes, then remove the toothpicks.
Cut a slit at the top of each potato, then push on the ends to open them for stuffing!
Fill each potato with butter, cheese, and sliced onions, plus any other chosen toppings. Serve, and enjoy!
