When I've got mushrooms and pork chops in the fridge, you can already guess what I'm making for dinner that night. Rich, creamy, flavorful mushroom gravy is the answer to all of your dinner woes: it's quick and easy, full-flavored, and makes the whole house smell amazing!
The best part is, it's the perfect one-pot gravy that minimizes dishes. Cook it up in the same pan you used to cook dinner and it'll soak up all that amazing flavor, making it even more delicious! Not to mention, it's ready in 20 minutes or less.
This gravy is so simple and delicious, once you try it as a pork chops mushroom gravy, I bet you'll want to try it with everything else. Good news: it's delicious for steak or as a mushroom gravy for chicken, too!

Ingredients for Pork Chops Mushroom Gravy
- Butter
- Mushrooms
- Yellow onion
- All-purpose flour
- Chicken stock
- Heavy cream
- Worcestershire sauce
- Dijon mustard
- Thyme (optional)

How to Make Mushroom Gravy
- In a skillet over medium heat, add butter, sliced mushrooms, and sliced onions. Cook until golden-brown, about 5-8 minutes. (If you've already cooked the pork chops, use the same pan without cleaning it!)
- Add the flour, and stir well to coat. Cook for 1-2 more minutes until the flour is cooked through.
- Add in the chicken broth and whisk, then the Worcestershire, and Dijon mustard. Mix again, then slowly add the heavy cream, stirring continuously.
- Cook until thickened, then add salt and pepper, and serve! Garnish with fresh thyme leaves (optional).

Pork Chop Gravy Recipe Tips
- This is the perfect gravy for making with pan-fried pork chops! Cook the gravy in the same pan without cleaning it to preserve all those delicious drippings and browned bits. They add a ton of flavor.
- Chicken stock is preferable to broth, but both will work! If you only have chicken broth or bouillon, that will work too. It may just need a little longer to thicken. If you have neither, vegetable or beef broth will work too, though the flavor will be affected.
- To make delicious smothered pork chops, place the pork chops back into the gravy before it's done cooking, right after adding the rest of the ingredients. Let the pork chops simmer in the gravy for a few minutes before serving!
- I love changing this simple pork gravy up by adding a splash of white wine, sherry, or Honeycup mustard. Fresh herbs are also delicious! Try adding a sprinkle of fresh parsley or rosemary.
- I recommend fresh mushrooms for this recipe; however, you can also use canned mushrooms. Drain and rinse, then cook them as instructed.
